Stuffed Peaches

Amaretto, Macaroons and a few minutes

I actually didn't make enough for dessert the other night. I really didn't think all the kids would like them. I only have two kids that generally eat fruit dessert recipes. BUT I ended up cutting these in half. ( Which actually makes the peach a quarter. Just for you math heads that were wondering) And even my daughter's boyfriend ate one.

The peaches are stuffed with macaroons and bathed in wine and amaretto. You can buy store bought cheap macaroons. Or use the leftovers from the chocolate macaroons recipe.

Stuffed Peaches

YIELD:12 - 16 half peaches stuffed

Ingredients:

* 1 beaten egg (can use just the white if you wish)

* 1 1/4 cups crumbled macaroons (maybe 7-8 cookies)

* 1/4 cup tasted almonds

* 6-8 peaches cut in half

* 1/4 cup white wine

* 1/4 cup amaretto



Procedure

* Combine egg, macaroons, almonds in a bowl.

* Add a splash or two of amaretto - just to wet the mixture.

NOTE: You choose the consistency of the stuffing. The more amaretto, the more wet. A and the more it spreads.

* Arrange peaches, cut side up in a baking dish.

* Divide macaroon mixture evenly among peaches.

* Dot each peach with about 1/2 tsp of butter.

* Combine wine and amaretto and pour in baking dish.

* Bake uncovered for about 20 minutes.

* Look for macaroon mixture to get slightly golden.






What is amaretto?

An Italian liqueur. If you ask most people their thought on the flavor, popular answer will be, "It taste like almonds, real sweet ones." Although there is more to the amaretto recipe than almonds that's the noted flavor.

Can I skip the amaretto?

Hmmm...this is what gives the stuffed peaches the unique almond flavor. Your choice.

What kind of white wine?

Don't worry about it. Really. Just use white.
