plum jam recipe This plum jam recipe doesn't have to be made with Italian plums, although that's what we use when we generally refer to any Italian dessert recipes which use plums. You can use any plum and you will be fine.

This jam can be used in my jelly roll recipe. And of course, for just plain ol' jam.

    If you think your plums are getting ripe before you can get the jam made - store them in the fridge up to about three days. After that "ripe" mark - they won't make that great of jam.

    My mom made tons of jam while we were growing up. The kind of jam that was "sealed" and kept for a long time. I posted this recipe as a refrigerator jam.

    But if you are going to seal and keep, one thing my mom was always careful about was the sterilization process of the jars. I mean, we kids could NOT EVEN look at the jars, talk about touching the jars, even sneeze within 2 feet of the jars once they were sterilized. So - if you aren't going to make this plum jam recipe as a refrigerator jam (lasts a month) then take precaution and follow all the sterilization "rules" before you put the jam in the jars.

    Plum Jam Recipe



    YIELD: Hmmm...Depends how big the plums are!

    INGREDIENTS:

    * 2 pounds of plums

    * 2 cups of sugar

    * 1 teaspoon of grated lime zest (don't leave this out!)

    * 1 tablespoon fresh lime juice(don't leave this out!)



    Procedure:

    * Cut all the plums in half

    * Take out the pit

    * Put all ingredients in a tall pot

    * Begin to boil

    * While the mixture is boiling mash the plums

    * Keep cooking everything but stir it often

    * When it gets to a consistency of honey pull it off the burner

    * Fish out all the skins with a fork

    * Let it cool

    * Put in the jam jars

    How long will this recipe last?


    About a month if you don't seal and just put the jar in the fridge.

    Do I have to Italian plums?


    Nope. Just make sure the plums are firm but kinda give a little bit to a light pressure squeeze. More on the firm than on the squishy side.
