This lemonade cake is part of my lemon dessert recipes collection. Although it's not one of my traditional Italian cakes - I felt justified in adding to my site. Why? Because we use lemons a lot in cooking. And yes, I know...this uses a cake mix,but..

The glaze is the "lemonade" cake part. The cake part is a cake mix. *Poof* Easy. Sometimes I just want it easy, ya know? There are times that I want a lemon-y flavor, and I just don't want to break out a ton of ingredients to make a fancy-pants Italian Dessert Recipe.

If you think your cake mix already has enough pudding in the mix itself - you can leave out the box of lemon pudding. But - I like adding it. Never hurts to have a cake too moist.

Lemonade Cake



YIELD: 1 13 x 9 cake works best ( can use loaf if you choose not to glaze)

INGREDIENTS:

* 1 box of lemon cake mix

* 1 package of lemon instant pudding (the 4 serving size)

* 4 eggs

* 1/4 oil

* 1 cup water

GLAZE INGREDIENTS: (optional)

* 1 can frozen lemonade

* 2 cups of powdered sugar



Procedure:

* Preheat the oven to 350 degrees

* Combine the cake mix, pudding, eggs, water and oil in a large mixing bowl.

* Blend well first

* Then beat at medium speed for 4 minutes.

* Pour into a greased and floured pan (13 x 9)

* Bake for 45 minutes or until tester comes out clean

* Cool in the pan about 5 minutes.

* While cooling mix the glaze ingredients together

* After the 5 minutes prick the warm cake with a fork - all the way to the bottom

* Pour the glaze mixture over the cake until it's completely absorbed.

* (If you don't want the glaze you can sprinkle with powdered sugar instead)

* Cool completely before cutting





Substitutions and Questions



Loaf pan or 13 x 9 pan?


If you don't want to glaze or if you want to glaze lightly - you can use the loaf pan. My grandma's friend made this in a 13 x9 and used all the glaze. Sometimes it's too much for me. So you decide.

What are some glaze options?


Since the can of lemonade is what makes this a lemonade cake - you can half the glaze and slice thinner and bake in a loaf pan. Or just dust with powdered sugar and garnish with fruit.

Can I skip the pudding?


When my grandma typed up this lemonade cake recipe, it was back in the day when box cake mixes sucked. They were bland and dried. So, my grandma usually added a box of pudding to any of her Italian cake recipes that used a boxed cake mix as a base.

Here's when she left it out - when the cake mix says, "pudding in the mix" or "with pudding". It won't kill it either way - if you leave it in or out. I just go for the way with the most flavor. Leave in it.

Lisa Gianotti Fathers Day I can already tell you the main recipes that are viewed on Italian Dessert Recipes during the last few weeks before Fathers Day - CHOCOLATE desserts, CHOCOLATE CAKES, CHOCOLATE cheesecake - basically anything chocolate.

Not sure why we think men need chocolate. But, it's a cyclical. I see it every year - all my chocolate dessert recipes get the highest viewings.

So, to give you some ideas - here's what most of us cook for our men on Fathers Day:
