how to make rice pudding I learned how to make rice pudding from my grandma's cookbook.

She would make it for my breakfast when I was little. Yeah, I know a little decadent for a breakfast. But what grandma would deny their grandchild a little sugar? The recipe is below.

This recipe comes from back-in-the-day when people weren't afraid of whole milk, butter and egg yolks. You just need a stove, about 30-40 minutes of time, plus the ingredients in the recipe.

You of course can swap out any of those fatty ingredients for the weaker less flavored watered down low fat stuff. You may have to add cornstarch to thicken though.

Rice Pudding Recipe



YIELD: 8 servings

INGREDIENTS:

* 1/2 cup rice (long cooking)

* 2 cups water

* 1 qt. milk

* 4 egg yolks

* 1 cup of sugar

* 1 tsp salt

* 1 tsp cinnamon

* 1/2 tsp nutmeg



How To Make Rice Pudding

* Simmer rice in water with salt for about 25 minutes.

* Drain water if any is left. Add the milk.

* Cook until rice is soft and milk is thick.

* Beat egg yolks and add the sugar. Continue beating until it's light in color.

* Gradually stir in the rice pudding, mix well, return to cook over low heat a minute or two - stirring constantly!

* Pour into serving dishes. Sprinkle with nutmeg, cinnamon.



Substitutions and Questions



Can I add butter?


When? To the recipe? No. And I really doubt you will want it on the top later. It's pretty "creamy" tasting without it.

When can I add raisins?


Right at the end. Soak you raisins in hot water while you are cooking the rice pudding. Drain right before serving and add them before you put them in the bowls.
