Homemade Granola Recipe"In the family for 15 years"
I've been making this homemade granola recipefor 15 years. And I really had a hard time deciding - should I post it? Is this a dessert? Is it a part of my Italian cookie recipes? Where does this fit?Then I said - forget it. Its such a great recipe. I eat it like a dessert. Dry and like a snack. But interestingly enough, it has the ingredients we use in Italian cookie recipes - apricots (see my apricot dessert recipes), raisins, and almonds. Those three are used quite often in Italian dessert recipes. And it's because of those ingredients and their distinct Italian flavor that I give this homemade granola recipe as a Christmas gift to co workers, neighbors and teachers. I put it in re purposed jar ( usually a kava jar) that I've washed and peeled the glue stuff off, add a little ribbon - and *poof*. Suffice to say - this granola recipe is like a dessert. Do make sure and bake for the full time. It brings out the oil in the almonds and it gives the honey and maple syrup a chance to coat and set into the oats. You can do a few things if you don't want to use apricots, and you can see some of those ideas below. YIELD: 6 - 1/4 cup servings
INGREDIENTS: * 4 cups of regular oats (not quick cooking oats) * 1/4 cup of almonds (I use whole, but slivered would be OK) * 1 1/2 teaspoons cinnamon * 1/4 teaspoon salt * 1/3 cup of water * 1/3 cup of honey * 1/3 maple syrup * 2 tablespoons brown sugar * 2 tablespoons of canola oil (vegetable oil is OK too) * Cooking spray * 1 cup minced dry apricots * 1 cup of raisins Procedure: * Preheat the oven to 325 degrees * Combine the first four ingredients in a bowl * Combine the water honey syrup and sugar in a small saucepan * Bring the mixture to a boil * Pour the syrup mixture over the oat mixture. * Toss it to coat. * Spread everything out on a jelly roll pan that is coated with cooking spray * Bake for 35 minutes or until golden, stirring it every 10 minutes (set the timer) * Place in a large bowl and stir in the apricots, and the raisins * Cool completely BEFORE storing in an airtight container. Substitutions and QuestionsWhat can I use instead of apricots? I've done a lot of swapping with the raisins and apricots. It just depends on what's in my cabinet. But I do prefer to KEEP the apricots in, because they pair well with the almonds. And too, people expect something "italian-y" from me. But when I'm strapped I've used: Do I have to use the maple syrup?I'm gonna say yes. And here's why. If you don't you get a VERY bland store tasting granola. And there's no need to go to all the work if you can get the same flavor for buying a $4.00 box of granola. It doesn't have to be super expensive syrup - but you do need a maple syrup.
