Grasshopper Pie

"Easy minty chocolate goodness"

This grasshopper pie recipe is super easy. I've stuck it in my tart recipes section because generally we don't make pies a whole lot in our culture. But we do like our liqueur!

And as far a liqueur goes - this grasshopper pie uses creme de menthe and white creme de cacao. If you want something else to use the white creme for - you can always make my white chocolate martini recipe.

The chocolate crust uses chocolate wafers. But if you are super stuck and just don't want to buy them or just can't find them - you could peel the whites off of an oreo and crush. OK, I'm kidding. But really, it is a thought for a desperate cook.

My grandma (the Italian one) picked up this recipe from a restaurant called River Inn. I'm sure it's gone by now - since I've had this recipe about 30 years.

All I know is I love alcohol in desserts. Always have. Even as a kid. Maybe that's why I grew up a built a whole website around Italian Dessert Recipes. Hmmm. Who knew.

Grasshopper Pie



YIELD: 1 - 9 inch pie

INGREDIENTS:

* 1/4 cup of milk

* 6 cups miniature marshmallow

* 1/3 cup of creme de menthe

* 2 tablespoons of WHITE creme de cacao

* few drops of green food coloring

* 4 cups of whipped cream (see - whipped cream recipe if needed)



Procedure:

* Prepare the crust

* Combine milk and marshmallow

* Cook and stir over low hear till marshmallow melt

* Remove from heat and cool - stirring every 5 minutes until partially set

* Stir in the liqueurs and food coloring

* Fold into whipped cream

* Pile into the crust

* Freeze until firm

* Trim with pretties (berries, rosettes, curls of chocolate)

* Let it stand 10 minutes before serving (don't want that teeth-headache-thing)

THE CRUST:

* 1 cup of chocolate wafer crumbs ( about 20 or so)

* 1/4 cup sugar

* 5 tablespoons melted butter

* Press into 9 inch pie plate and chill

* Mix these guys together and chill



Substitutions and Questions



Do I HAVE to use creme de menthe?


No you don't. You can use peppermint flavoring. Just adjust it to the amount you feel is necessary.

Do I HAVE to use creme de cacao?


You do need something that gives a chocolate flavor and is light-liquidy. If per chance you stumble upon a white chocolate flavoring that could be swapped out. Somebody somewhere makes one. I'm sure.
