Rum Soaked Cherry Chocolate BarsYes, it's rich
These rum soaked cherry chocolate bars happened because I needed a goodie to take down to my daughters house. During the 5 hour trip I was afraid the family would snack on them and they would never arrive. So, I hid them in the trunk of the car! When we reached our destination. The trunk smelled awesome. And the rum soaked cherries had permeated the whole cookie. That is the secret tip! Let these sit in a container with a tight lid at least 24 hours! Many Italian cookies call for bourbon, amaretto, anise or rum. And the key is, bake a day ahead of time. Seal the container. Serve 24 hours later. If you have hesitated to try Italian dessert recipes because of the alcohol, there are ways around it. I did it for years. (I had a family member that wouldn't have alcohol in ANYTHING.) You can make these cookie bars without the rum, or substitute. Check out the substitutions. This is slightly forgiving. Rum Soaked Cherry Chocolate Bars!Ingredients: 1/3 cup cherries 3 tablespoons rum 1/2 cup flour 1/2 cup chopped walnuts 1/2 cup light brown sugar 1/4 teaspoon baking soda 1/4 cup butter Filling 1 ounce chocolate - unsweetened 1/4 cup melted butter (cooled) 1/2 cup light brown sugar 1 egg, lightly beaten 1/4 cup of flour 1/8 tsp of cinnamon 1/8 tsp of allspice Procedure Preheat oven to 350 degrees. In a small bowl let the cherries and rum sit for at least an hour. The drier the cherry, the better. In separate bowl combine walnuts, brown sugar, flour, baking soda and butter. Blend until the mixture resembles a coarse meal. Press the mixture in into a lightly buttered 8 inch square pan and bake. Bake for 15 minutes or until the dough is golden. Filling Melt chocolate, stir in butter until melted and combined. Remove from heat and stir in brown sugar, eggs, cherries. If there is "rum juice" remaining add it too. Add flour, cinnamon and allspice - blend. Pour the mixture over the hot baked layer. Spread it evenly over the top. Return the pan to the oven Bake another 15 minutes, or until the center is done. (Test with a toothpick) Cool and cut into bars. Can I substitute margarine for butter?Nope, never in the history of ever. Horrible things will happen. Ok, not really. But
margarine is the grossest toxic waste on the market. Use it at your own risk.
What type of dried cherries?
Just dried cherries. Nothing fancy or elegant is needed. And actually, the more dried out they are -
the more rum they soak up!
What can I substitute for walnuts? Well, for Italian cookies, we use two main nuts. Almonds and walnuts. I'm sure you could
used almonds. Just cut them small enough so they don't stab your throat. And we almost NEVER
use pecans, but I'm sure they would work.
Can I soak the cherries in something else? Bourbon would be GREAT! But these cherry chocolate bars will turn out just
wonderful if you decide to skip the rum altogether.
What is allspice?
Allspice is from the berry of the evergreen "pimento tree". It's used more in
other ethnic cooking cultures. But we use it here and there.
So, it's not needed, it's just an extra little zing.

Ok, not MASSIVE amounts. But I do have to finish off the evening meal with a
little sweet something. When I was a kid my health conscience mother would ration my Halloween candy. Her mantra was, "white sugar will kill you". But my Italian grandma always told me, "Everybody needs a little bit of sugar." :-) So, to get my October Halloween sugar fix I will make the traditional Italian cookie recipe, Venetian Bones of the Dead. Italians make these for the Day of the Dead on November 2nd. So - hey, our holiday in America - Halloween is the closest. So - while the neighborhood is slamming down a bunch of gross mass produced candy on October 31st, I'll have a real goodie. Oh yeah, I'll have to post it too! (Eventually!) You know how it is. Work. Kids. Clean. Cook. I'll see if Bones Of The Dead is in my grandma's first recipe file she started when she married in 1932. Most of the recipes on my site came from her influence. If they aren't in her file - then I got them from her friends. And the remainder I experimented with adapting her style. I hope she looks down and smiles this Halloween. Lisa
